Hay Milk

In 2016, Traditional Specialty Guaranteed (TSG) Hay Milk was recognized by European regulation. To obtain the "hay milk" indication, milk must be produced by cows raised without the use of genetically modified organisms (GMOs) and silage feed.

Cows also must consume at least 75 percent of their annual dry matter in the form of fiber-rich roughage, such as fresh or dried and preserved fodder such as straw, hay and chaff.

More than 450 million liters of milk per year are produced in Austria under this specification, accounting for about 15 percent of the country's total milk production, and hay milk is also becoming very popular in France.

In Italy, on the other hand, unfortunately, Hay Milk is still not very popular. Among the few farms that have adhered to this specification is Ferrari Bio, an all-organic farm that produces milk for the production of organic Parmigiano ReggianoFerrari bio's products are guaranteed three times: by the organic specification, the Parmigiano Reggianospecification and the Hay Milk specification. A triple guarantee of quality and wholesomeness.
